David and Leonie Wood have worked in the drinks trade for almost fifty years between them. From humble beginnings working in drinks retail, back in the nineties, they scarcely dared to dream that they might one day be working on the beautiful Scottish Hebridean Isle of Islay.
They moved to Islay in 2012, waving goodbye to 21st century stresses, keen to learn at first hand what it takes to make the very best of Single Malt Scotch Whiskies.. David was Brand Home Manager at Diageo’s iconic Lagavulin and Caol Ila Distilleries but soon became Distillery Manager at Caol Ila Distillery. Leonie was Visitor Centre Manager at the relatively new Kilchoman Distillery..
A city girl at heart, Leonie missed hosting the tastings and dinners that they’d held as an independent retailer in the Staffordshire Moorlands. David was eager to use the skills he’d gained through whisky production, bottling and retailing, and wanted to share his enthusiasm for whisky far and wide. The idea of ‘DISTILLED’ came together, to reach out to everyone interested in whisky, to those who think they don’t like whisky, and to those who just want to learn more.
‘Distilled’ was chosen because of David’s direct approach to tastings, of simplifying complex production processes to the facts that help you appreciate why the whisky smells and tastes the way it does.
Whisky can be seen as a complicated subject, with words, names and terms that are sometimes difficult to pronounce and understand. David and Leonie’s wealth of experience means help guide beginners and connoisseurs alike, through the wonderful world of whisky, giving the imbiber the confidence to explore.
